What "raw and unfiltered" actually means.
Most honey on a grocery shelf has been through a lot before it reaches you. It is usually flash-heated to around 160 degrees and pushed through an ultra-fine filter. That makes it look crystal clear, pour smoothly, and sit on a shelf for a long time without changing. It also strips out the pollen and quiets the aroma and character the bees built in.
Raw and unfiltered means we skip all of that. We never pasteurize, and we never finely filter. We strain off the bits of wax, let the honey settle, and jar it. Straining is not the same as filtering: one removes the wax, the other removes the honey's character. We only do the first.

Why real honey turns thick and grainy.
If your honey turns cloudy, pale, or grainy, it did not go bad. It crystallized, and that is one of the surest signs you are holding the real thing. Raw honey still carries tiny bits of natural pollen, and those give the sugars something to form around, so it sets sooner than the processed kind.
To bring it back to liquid, stand the jar in a bowl of warm, not hot, water for a little while and stir now and then. Skip the microwave and the stovetop. High heat is exactly what we avoided in the first place. And there is no rush: crystallized honey is wonderful spread straight onto toast.
Honey that basically never expires.
Honey is one of the only foods that essentially never spoils. It holds very little water, it is mostly sugar, and it is naturally acidic, which together make it a place where bacteria and mold simply cannot live. Archaeologists have found pots of honey in ancient Egyptian tombs, thousands of years old, and still edible.
Any best-by date you see is about peak quality, not safety. The one way honey can actually turn is if water gets into the jar and lets it ferment, which you would notice right away from a sour, yeasty smell. So keep the lid on and the spoon dry, and a jar of ours will outlast almost everything else in your pantry.

Why no two jars are exactly alike.
A jar from this season may look or taste a little different from the last, and that is exactly how it should be. Honey takes its color, aroma, and flavor from the flowers the bees worked. Ours comes from the wide-open clover and wildflowers of North Dakota, so it leans light, clean, and mild, but every harvest carries the signature of that particular bloom.
Processed honey is blended and filtered to erase that variation and taste the same every time. We would rather you taste the season. The shifting shade of gold and the gentle cloudiness are not inconsistency. They are provenance.
A few ways to enjoy it.
Stirred into hot tea, spooned over thick yogurt, drizzled on a sharp cheese or warm cornbread, whisked into a dressing, or eaten straight off the spoon when no one is looking. If your jar has crystallized, it spreads beautifully on toast with no fixing required.
A note on little ones
Do not give honey, raw or not, to a baby under one year old. It is a rare risk, but a serious one, and the same guidance you will find from pediatricians everywhere.

The honey
Is your honey really raw?+
Yes. We never pasteurize it and never finely filter it. We strain out the wax, let it settle, and jar it, so it keeps the natural pollen, aroma, and texture the bees gave it.
Is it pasteurized or filtered?+
No on both. Pasteurizing means high heat, and fine filtering strips out the pollen. We do neither. We only strain off bits of wax, which is what keeps the honey raw and whole.
What is actually in the jar?+
One ingredient: raw honey. That is the entire list.
What kind of honey is it, and what does it taste like?+
It is a single-origin wildflower honey from North Dakota that runs almost entirely clover. Expect a light, clean, mild flavor rather than a dark or bold one.
Why does the color or taste vary between jars?+
Because the flowers vary. Honey takes its character from the bloom, and we do not blend or filter that away. Small shifts in shade or flavor are the mark of real, single-origin honey.
Is it organic?+
It is not certified organic, and almost no honey from United States hives is. Bees forage for miles in every direction, so no beekeeper can fully control where they land, which makes organic certification nearly impossible here. We focus instead on raising healthy bees and keeping the honey pure and untouched.
Keeping it
My honey crystallized. Did it go bad?+
Not at all. Crystallizing is simply what real raw honey does over time, and it is a good sign. To bring it back, stand the jar in warm, not hot, water for a while and stir now and then. Skip the microwave, since high heat undoes the raw part.
Does honey expire?+
Pure honey essentially never spoils. Any best-by date is about peak quality, not safety. The only real risk is moisture getting into the jar and causing fermentation, so keep the lid on and your spoon dry.
How should I store it?+
Room temperature, lid on, out of direct sun and heat. There is no need to refrigerate, since cold only speeds up crystallizing. Glass is its ideal home.
